Gluten Free Pumpkin Spice Muffins

350 grams pre-mixed gluten free muffin mix
2 teaspoons cinnamon
1/2 teaspoon ginger
1/3 teaspoon cloves
1/2 cup chopped pecans (packaged not bulk)

2 eggs
1 cup cooked pumpkin (Western Family is GF, I used that one)
1/3 cup olive oil
2 eggs
1 teaspoon vanilla (Club House Vanilla Extract is GF)

So I used a pre-mixed flour mix for my muffins, and it worked out really well. I'm still not sure how to mix all my flour's properly but this pre-mix was awsome! There are a few types available I don't think It will matter what one you use, the recipe will be the same for all muffin pre-mix.

Mix all dry ingredients, including nuts in a large bowl. In a seperate bowl wisk eggs, oil, and vanilla together. Mix in pumpkin puree. Fold the wet ingredients into the dry ingredients. Pour into lined or sprayed muffin tins and sprinkle with more chopped pecans. Bake for 15-20 minutes at 350F.
Mazola non-stick sprays are all GF, I like the olive oil spray best.
Makes 12 muffins.

I have been learning how to cook and bake gluten free this week! Totally a challenge for me! I love to bake so not being able to use all the ingredient's I love and have used forever has taken some getting used to! It's been really fun though, and so many grocery stores post gluten-free item's on their website so it's made shopping a little easier! YAY! I'm going to post recipes as I make them and if they work well! LOL! If it's a miss i'll just skip it.
Maybe it will help some other Celiac's who love to bake and cook too.
What a difference a week makes. Feels like the leaves just started to change and suddenly we had the first snowfall of the season today! Happens so fast, I wanted fall to stick around a little longer before the snow started to fall ;)

It was a fantasticly beautiful fall day in Lethbridge today, the leaves are starting to change color, the nights are getting cold, and it feels like fall. I luv this time of year! It brings back a million childhood memories of birthday parties, thanksgiving, and halloween costumes.
And there are always so many good things to come in the fall! It just makes me smile :)
